Wondering if I change my name, would it be possible to change it back to my original (down the road)?
Also my name has the double spaces and such, so please can someone give me a legitimate answer :)? Thanks!

When you change your name, others can take your previous one, so be careful.

People cannot take your previous one as it is your sign up name.
example I make an account called botter123
I change it's name to botter321
I can still login using botter123 as the username as it is fixed to my account but the identity has changed

I'm pretty sure if it's double spaced you won't be able to go back to the name, because jagex does not let people make those types of names anymore.

This. But if it was a normal name, if you changed it you will have to wait 28 days before changing and being able to it if you still wanted it back. After the 28 days, you have about 1 week if not 2, to change back to your original name. If you do not change back within that time, it becomes available to everyone and anyone.
Hopefully I'll explain it well.
If you chnge your name from 'P1nky' to 'Zezima', you would login to the game via 'P1nky'.
From the day you change the name, you have to wait 28 days until you can change 'Zezima' back to 'P1nky'.
In those 28 days, the name 'P1nky' is being held so that nobody can use it, but after the 28 days, you have a grace period of one week to change the name back, at which point the name becomes available to everyone.

If its your origional username, which you created the account with, You have 3 month period in which only you can take it back.
But if its not the accounts first username, then its like what SIN said, 35 days
