Karamja Fishing (Lobs or Swordies) - Swordiess UNLESS you are low lvl and unable to catch swordies efficiently.
Salmon/Trout Fly Fishing - Soley for EXP, powerdropping however better done at Barbarian village.

Is it faster to gain exp by taking Fishing Urns (occupying slots in the inv) or by normally fishing Lobsters?

Fishing urns effectively increase your xp per hour by 20%. Not using them is very silly.
The only time fishing for money is good is when you are fishing rocktails. Every other kind of fishing should only be for xp.
